Chocolate chip cookies!

Andy is extremely busy with studying. She had her first exam of this semester last week and now she is preparing her next exam and working on two assignments. While she is stressing on her schoolwork I, on the other hand, have a week off. Unfortunately it is raining all the time so I don’t really feel like going anywhere, instead I love to stay in bed most hours of the day watching Desperate Housewives over and over again. Today I decided to surprise Andy and bake her some cookies. We already ate all of them, so I guess you can tell how good they were. For everyone who is interested in baking the cookies their selves you can find the recipe below. The recipe comes from ‘The complete Magnolia Bakery cookbook’ written by Allysa Torey and Jennifer Appel.

Ingredients for the cookies
1,5 cups all-purpose flour
1 teaspoon baking soda
0,5 teaspoon salt
1,33 sticks unsalted butter, softened
0,5 cup sugar
0,5 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
0,5 cup chocolate chips

Recipe
Preheat the oven to 350 degrees. Combine the flour, baking soda and salt in a large bowl. Set the bowl aside. Then cream the butter with the sugars until smooth, about 3 minutes, in another large bowl. Add the egg and the vanilla and mix well. Add the flour mixture and beat thoroughly. Stir in the chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving several inches between for expansion. Bake for 10-12 minutes or until lightly golden brown. Cool the cookies on the sheets for 1 minute, then remove the rack to cool completely.

Sounds pretty simple huh? If you have any questions please leave them in the comment box below.

With love,
Lysa
